Desert Rose

The desert rose recipe

Ingredients

  • 200 g of flour.
  • 50 g of raisins.
  • 2 large eggs.
  • 50 g of toasted almonds.
  • 150 g of sugar.
  • 1 cup of toasted unsweetened cereal.
  • Lemon zest.
  • 1 sachet of yeast.
  • Salt.

Preparation

  • Before you start preparing your cookies, soak the raisins for at least an hour. When the raisins are hydrated, remove them from the water, drain them and reserve them in a small bowl.
  • Beat the eggs in a deep bowl, when they are well mixed add the sugar and a pinch of salt, stir until the sugar crystals have disappeared and you have a foamy result.
  • Sift the flour over the eggs to avoid lumps, and add the yeast and lemon zest as well.
  • Mix everything very well, until the ingredients are properly incorporated.
  • Add the drained raisins and the chopped almonds.
  •  You can mash them with a knife to preserve large pieces and stir until they have been mixed with the rest of the ingredients.
  • Take the opportunity to preheat the oven to 180 ° C.

Making the cookies

  • Put the cereal in a deep plate and, helping you with a spoon, drop portions of the dough you have prepared on the cereal.
  • The idea is that you do this slowly, as the mixture should join the cereal forming flakes.
  • The dough will be completely covered by the cereal granules. In this way we shape our cookies.
  • When you have the shape of your cookies, carefully remove them from the plate and place them on a tray previously lined with baking paper.
  • Once you have prepared everything, take the tray to the oven and leave it for approximately ten minutes.
  • The baking time should not be too long, as this will over harden the dough and there is a risk that the cereal will burn.
  • They should be removed from the oven when they still feel soft to the touch.
  • Once out of the oven, let them cool to room temperature, as the temperature decreases, the cookies will become hard.
  • If you prefer, you can add melted chocolate to them before they harden.
