Delicious Recipe To Prepare Paella

1. Valencian paella

The traditional Valencian paella, which is the one we will see in this recipe, is made from rabbit, chicken and beans; It is different from the seafood paella and the mixed one, which mixes seafood and chicken.

Ingredients for 4-6 servings:

  • Rice (400 g).
  • Red pepper (30 g).
  • Salt and pepper to taste.
  • Poultry broth (1 L).
  • Medium tomato (60 g).
  • A small branch of rosemary.
  • Extra virgin olive oil.
  • Chicken chopped into pieces (½ kg).
  • Rabbit also chopped into pieces (½ kg).
  • Flat white beans (100 g).
  • Flat green beans (80 g).
  • Paprika powder (5 g).
  • Some threads of saffron (you can substitute yellow food coloring, but it is not ideal).

preparation:

  1. The chicken and rabbit pieces are fried in a medium paella pan (large and shallow pan) with the olive oil.
  2. When the meat is lightly browned on all sides , add the flat green beans and stir for a few minutes, taking care not to burn them.
  3. Add the tomato, cut into small pieces or grated, and the white beans; then add the paprika powder and mix well. Sauté for a few minutes.
  4. Then add the chicken broth, a few threads of saffron, rosemary, salt and pepper. The fire rises.
  5. When the liquid boils, add the rice and stir. You have to taste and rectify the salt if necessary.
  6. Garnish with red pepper cut into strips.
  7. Lower the temperature when the water evaporates, without it drying out completely. Then it is covered with a lid or aluminum foil and left to cook for approximately 10 minutes.
  8. If the grain is soft, turn off, let it rest for another 10 minutes and serve.

As you will see, preparing paella in this style is very simple.

2. Seafood paella

Ingredients for 4 people:

  • 2 cloves of garlic
  • Onion (60 g).
  • Squid (½ kg).
  • Fresh prawns (½ kg).
  • Medium tomato (60 g).
  • Red pepper (30 g).
  • Rice (400 g).
  • Prawn broth (1 L).
  • Peas (100 g).
  • Fresh parsley leaves.
  • Olive oil, salt and pepper to taste.
  • Yellow food coloring or some saffron threads.
  • Sea shells, clams and mussels (150 g).

Preparation

  1. The first thing to do is clean and peel the prawns and reserve the shells and heads for the broth.
  2. The squid, well cleaned, are cut into wheels. Sea shells should be washed with plenty of water so that all the sand comes out.
  3. In the paella pan, add the olive oil. There the pepper, chopped tomatoes and onion are sautéed. Pepper and salt are added.
  4. Squid and sea shells are added to that sauce. They cook for a few minutes, until a broth begins to form.
  5. Add the rice and mix well. Then the previously prepared shrimp broth is added. Can be completed with water.
  6. While it is stirring, add the yellow food coloring or saffron and let it boil for about 3 minutes.
  7. Fresh peas, prawns and finely chopped parsley are added while there is still liquid in the pan. The salt and pepper are rectified.
  8. When the liquid is almost dry, place some strips of pepper and prawns with their shells as a decoration.
  9. Lower the heat, cover and cook for 15 more minutes or until the grain is soft. It is drizzled with olive oil and served.
