For the cupcakes

  • 2 eggs (180 g).
  • 1 cup of flour (150 g).
  • 2 cups of sugar (200 g).
  • 1 cup of vegetable oil (120).
  • ½ cup of grated coconut (50 g).
  • ¼ teaspoon of salt (1.25 g).
  • ½ teaspoon of yeast (2.5 g).
  • ¼ teaspoon of baking soda (1.25 g).
  • ½ teaspoon of rum essence (2.5 g).
  • 9 tablespoons of sour cream (90 g).
  • ¼ cup of pineapple chopped very small (can be natural or canned) (25 g).

Note: sour cream can be substituted for unsweetened Greek yogurt.

For the frosting

  • 3 cups of icing sugar (480 g).
  • 1 tablespoon of coconut cream (5 g).
  • ½ teaspoon of rum essence (2.5 g).
  • 3 or 4 teaspoons of grated coconut (30-40 g).
  • 2 cups of creamy Philadelphia cheese (225 g).
  • 1 stick of butter softened at room temperature (110 g).

Preparation

Of the cupcakes

  • Heat the oven to 180ºC and prepare the mold and the capsules.
  • In a bowl, beat the eggs with the sugar. When they are well mixed, add the vegetable oil and beat again until well incorporated.
  • Add the essence of rum and sour cream or unsweetened Greek yogurt.
  • Add the chopped pineapple and the grated coconut. Mix until a homogeneous mixture is formed.
  • Transfer the dough to the capsules and bake the cupcakes for 20 or 22 minutes.
  • Once done, let cool on a rack.

From the frosting

  • In a bowl, beat the butter with the cheese. When it is uniform, add the grated coconut, the rum essence and the coconut cream. Beat again until the mixture is homogeneous.
  • Add the sifted icing sugar and beat.
  • Transfer the mixture to a pastry bag with a round nozzle or as little closed as possible and decorate the piña colada cupcakes (better if they are a little cold) with the glaze.

  • 1 ½ of flour (150 g).
  • 1/3 cup of rum (33 ml).
  • 1/3 cup of sugar (33 g).
  • 3 large eggs (180 g).
  • 1 cup of grated coconut (100 g).
  • ¾ cup of coconut rum (15 ml).
  • ½ cup of butter (150 g).
  • 1 can of crushed pineapple (400 g).
  • 2 teaspoons of vanilla extract (10 ml).
  • 1 teaspoon of baking soda (5 g).

For the frosting

  • 1 ½ cups of whipping cream (150 g).
  • 1/3 cup of sugar (33 g).

Preparation

Of the cupcakes

  • Preheat the oven to 180ºC.
  • Drain the can of chopped pineapple in a small bowl. Reserve ¼ cup of pineapple juice and 1 cup of drained pineapple.
  • In a small bowl, combine the pineapple juice, rum, coconut milk, and vanilla extract and set aside.
  • In a medium bowl, whisk together the flour, yeast, and salt. Reserve.
  • Now, in a large bowl, beat the butter and sugar, until a soft cream is formed.
  • Add the eggs one by one, beating well after each addition.
  • Add the milk mixture alternating it with the flour mixture until well incorporated.
  • Add the drained pineapple, the grated coconut and mix with enveloping movements.
  • Fill ¾ of the capsules with the dough and bake for 25 minutes.

Glazed

  • In a large bowl, combine the cream and sugar and beat with the electric mixer until solid peaks form. You have to be careful not to overdo it, because otherwise the cream becomes butter.
  • Fill a pastry bag with the icing and garnish the piña colada cupcakes with the mixture.
